Description
This Delicious Jasmine Rice with Coconut Milk is a light and fluffy side dish infused with rich coconut flavor. Perfectly cooked on the stovetop, it’s an ideal accompaniment for curries, grilled meats, seafood, or tropical-inspired meals, offering a creamy texture and subtle sweetness.
Ingredients
Rice and Liquids
- 1½ cups jasmine rice
- 1 cup canned coconut milk (preferably full-fat)
- 1 cup water
Flavorings
- 1 tablespoon butter or coconut oil
- ½ teaspoon salt
- 1 teaspoon sugar (optional)
Garnish
- Fresh cilantro or toasted coconut, for garnish
Instructions
- Rinse the Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch, ensuring the rice cooks fluffy and separate.
- Combine Liquids and Flavorings: In a medium saucepan, combine the coconut milk, water, butter (or coconut oil), salt, and sugar if using. Stir to mix well.
- Boil the Mixture: Bring the coconut milk mixture to a gentle boil over medium heat, stirring occasionally to prevent sticking or burning.
- Add the Rice and Simmer: Stir in the rinsed rice, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let it simmer gently for 15 minutes without lifting the lid.
- Rest the Rice: Remove the saucepan from heat and let the rice stand covered for an additional 10 minutes to absorb all the moisture and finish cooking.
- Fluff and Garnish: Fluff the rice gently with a fork to separate the grains. Garnish with fresh cilantro or toasted coconut before serving for added aroma and texture.
Notes
