- 2 eggs, beaten

Thai Sauce
- ¼ cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon sriracha (optional)

Instructions
- Heat the oil: Pour vegetable oil into a deep skillet and heat it to 350°F (175°C) to ensure it’s hot enough for frying the chicken bites to a crisp golden brown.
- Prepare the coating: In a bowl, combine the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper. Mix well to evenly distribute the spices within the flour mixture.
- Coat the chicken: Dip the cubed chicken pieces into the beaten eggs, allowing excess to drip off, then thoroughly coat them in the seasoned flour-cornstarch mixture for an even, crispy crust.
- Fry the chicken: In batches, carefully place the coated chicken pieces into the hot oil. Fry for 4–5 minutes per batch until they are golden brown and cooked through, ensuring the interior is no longer pink and temperature reaches 165°F (74°C).
- Make the sauce: While frying, whisk together sweet chili sauce, soy sauce, honey, lime juice, and optional sriracha in a small bowl until well combined to create the flavorful Thai-inspired sauce.
- Toss the chicken in sauce: Once all chicken bites are fried and drained of excess oil, toss them gently in the prepared Thai sauce to coat evenly without losing crispiness.
