Description

  • 2 cans (14.75 oz each) canned salmon, drained
  • 2 large eggs
  • ¾ cup breadcrumbs
  • ¼ cup finely diced onion
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil, for cooking


Instructions

  1. Prepare the Salmon: Drain the canned salmon thoroughly and remove any large bones or skin if preferred to ensure a smooth texture in the patties.
  2. Mix Ingredients: In a large bowl, combine the drained salmon, eggs, breadcrumbs, diced onion, chopped parsley, lemon juice, Dijon mustard, garlic powder, paprika, salt, and black pepper. Mix gently until everything is evenly incorporated without overworking the mixture.
  3. Shape Patties: Form the mixture into 8 evenly sized patties, making sure they are compact to hold together while cooking.
  4. Heat Oil: Warm the olive oil in a large skillet over medium heat to prepare for frying the patties.
  5. Cook Patties: Place the patties in the skillet and cook for 3–4 minutes on each side, turning carefully, until they become golden brown and are heated through.
  6. Drain Excess Oil: Transfer the cooked patties to a paper towel-lined plate to absorb any extra oil.
