Coating
- 1/2 cup flour
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup grated Romano cheese
- 1/4 cup grated Parmesan cheese
Sauce & Cooking
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup chicken broth
- 1 tablespoon lemon juice
Instructions
- Prepare the Chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking. Season both sides lightly with salt and pepper.
- Coat the Chicken: Dredge each chicken breast in flour, shaking off any excess. Dip into the beaten egg, allowing any excess to drip off. Then coat thoroughly in a mixture of breadcrumbs, grated Romano cheese, and grated Parmesan cheese.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the coated chicken breasts and cook for about 5 to 7 minutes per side, or until the coating is golden brown and the chicken is cooked through (internal temperature 165°F/74°C).
- Make the Sauce: In the same pan, reduce heat to low and melt the butter. Add chicken broth and lemon juice to the pan, stirring and allowing the sauce to simmer for 2-3 minutes to combine flavors and slightly thicken.
- Serve: Pour the lemon butter sauce over the cooked chicken breasts and serve immediately. This dish pairs well with pasta or steamed vegetables.
