Description

A crispy and flavorful chicken dish inspired by the Cheesecake Factory classic, featuring chicken breasts coated in a crunchy Romano-Parmesan crust and topped with a rich, tangy lemon butter sauce. Perfectly pan-fried to golden perfection and served as a satisfying Italian-American main course.

Ingredients

Chicken

  • 2 chicken breasts
  • Salt and pepper to taste

Coating

  • 1/2 cup flour
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Romano cheese
  • 1/4 cup grated Parmesan cheese

Sauce & Cooking

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking. Season both sides lightly with salt and pepper.
  2. Coat the Chicken: Dredge each chicken breast in flour, shaking off any excess. Dip into the beaten egg, allowing any excess to drip off. Then coat thoroughly in a mixture of breadcrumbs, grated Romano cheese, and grated Parmesan cheese.
  3. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the coated chicken breasts and cook for about 5 to 7 minutes per side, or until the coating is golden brown and the chicken is cooked through (internal temperature 165°F/74°C).
  4. Make the Sauce: In the same pan, reduce heat to low and melt the butter. Add chicken broth and lemon juice to the pan, stirring and allowing the sauce to simmer for 2-3 minutes to combine flavors and slightly thicken.
  5. Serve: Pour the lemon butter sauce over the cooked chicken breasts and serve immediately. This dish pairs well with pasta or steamed vegetables.

Notes

  • Use freshly grated Romano and Parmesan cheeses for the best flavor and texture in the crust.
  • Serve with your choice of pasta or steamed vegetables to make a complete meal.
  • Do not overcrowd the pan when cooking the chicken to ensure even browning and crisp crust.
