Instructions
- Cook the pasta: Prepare the pasta according to the package directions until al dente. Drain and set aside, reserving a small amount of pasta water in case the sauce needs thinning later.
- Sauté garlic: In a large skillet over medium heat, melt the butter and sauté the minced garlic for about 30 seconds until fragrant but not browned.
- Cook zucchini and corn: Add the sliced zucchini and corn kernels to the skillet. Sauté for 4 to 5 minutes until the vegetables are tender but still vibrant in color.
- Add tomatoes: Stir in the cherry tomatoes and cook until they soften and release their juices, about 3 to 4 minutes.
- Make the cream sauce: Pour in the heavy cream and add the grated Parmesan cheese, stirring to combine. Allow the sauce to simmer gently until it becomes smooth and slightly thickened, about 3 to 5 minutes. If needed, add reserved pasta water a tablespoon at a time to reach your desired sauce consistency.
- Toss with pasta: Add the cooked pasta to the skillet and toss to coat all the ingredients evenly with the creamy sauce.
- Season: Taste and season with salt and freshly ground black pepper as needed.
- Garnish and serve: Remove from heat, garnish with fresh basil leaves, and serve immediately for the best flavor and texture.
