Description

A rich and comforting soup combining savory browned sausage, tender white beans, and a creamy broth seasoned with Italian herbs, creating a satisfying and filling meal perfect for a cozy dinner.

Ingredients

Meat and Oil

  • 1 lb sausage
  • 1 tbsp olive oil

Vegetables and Aromatics

  • 1 small onion, chopped
  • 2 cloves garlic, minced

Beans and Liquids

  • 1 can white beans, drained
  • 3 cups chicken broth
  • 1 cup heavy cream

Seasoning and Garnish

  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the Sausage: Heat the olive oil in a pot over medium heat. Add the sausage and cook until it is nicely browned all over, breaking it apart as it cooks to ensure even browning and flavor development.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the pot with the sausage. Sauté until the onion becomes translucent and the garlic fragrant, about 3-4 minutes.
  3. Add Beans and Broth: Stir in the drained white beans and pour in the chicken broth. Bring the mixture to a gentle simmer.
  4. Simmer Soup: Let the soup simmer uncovered for 15 minutes to allow the flavors to meld and the beans to soften further.
  5. Add Cream and Seasoning: Stir in the heavy cream and Italian seasoning. Continue to simmer for an additional 5 minutes, stirring occasionally, to thicken the soup slightly and blend the flavors.
  6. Adjust Seasoning and Serve: Taste the soup and adjust salt and pepper as needed. Ladle into bowls and garnish with fresh parsley. Serve warm for a comforting meal.

Notes

  • Use spicy sausage for an extra kick of flavor.
  • Substitute heavy cream with milk for a lighter version of the soup.
  • Add fresh spinach or kale during the last few minutes of cooking for additional nutrients and color.
