Description

Soft and pillowy potato gnocchi tossed in a rich and velvety garlic-mushroom cream sauce. This quick and cozy Italian-inspired dish delivers restaurant-quality comfort food that’s perfect for a satisfying dinner any night of the week.

Ingredients

Main Ingredients

  • 1 lb gnocchi (store-bought or homemade)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 cups cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the gnocchi: Bring a large pot of salted water to a boil and cook the gnocchi according to package directions, usually until they float to the surface, about 2-3 minutes. Drain the gnocchi well and set aside.
  2. Sauté the mushrooms: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced cremini mushrooms and sauté, stirring occasionally, until they turn golden brown and reduce in size, about 5–7 minutes.
  3. Add the garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, making sure not to burn it.
  4. Make the cream sauce: Pour in the heavy cream, reduce the heat slightly, and let it simmer gently for 2 minutes to thicken and meld the flavors together.
  5. Toss gnocchi with sauce: Add the cooked gnocchi and grated Parmesan to the skillet. Toss everything together until the gnocchi is thoroughly coated in the creamy mushroom sauce.
  6. Season and garnish: Taste the dish and season with salt and freshly ground black pepper as desired. Garnish with chopped fresh parsley before serving.

Notes

  • For extra color and nutrients, add fresh spinach or peas during the last few minutes of cooking.
  • Substitute half-and-half for heavy cream if you prefer a lighter sauce.
  • Use gluten-free gnocchi to make this recipe suitable for gluten-sensitive diets.
  • Freshly grated Parmesan provides the best flavor, but pre-grated works in a pinch.
