- 700 g boneless, skinless chicken breasts, cooked and diced
- 1 large head cauliflower, cut into florets
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 green onions, sliced
- 2 tbsp fresh parsley, chopped
Dairy and Cheese
- ½ cup cream cheese, softened
- ½ cup plain Greek yogurt
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese

- ½ tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat Oven and Prepare Dish: Preheat the oven to 200°C (400°F) and lightly grease a baking dish to prevent sticking and ensure easy cleanup.
- Season and Roast Cauliflower: Toss the cauliflower florets with olive oil, salt, pepper, and paprika. Spread them evenly on a baking sheet and roast for 15–20 minutes until they are slightly tender and lightly browned.
- Mix Creamy Base: In a large bowl, combine the cream cheese, Greek yogurt, minced garlic, and onion powder along with half of the shredded cheddar cheese to create a rich, flavorful base.
- Add Chicken and Cauliflower: Add the cooked diced chicken and roasted cauliflower to the creamy mixture, gently folding everything together until the ingredients are evenly coated with the sauce.
- Assemble Casserole: Transfer the mixture into the prepared baking dish, spreading it out evenly to ensure uniform cooking.
- Add Toppings: Sprinkle the remaining cheddar cheese and shredded mozzarella evenly over the top of the casserole for that melty, cheesy crust.
- Bake: Bake in the preheated oven for 20–25 minutes until the casserole is hot, bubbly, and the cheese on top is fully melted and slightly golden.
- Garnish and Rest: Remove from the oven and garnish with sliced green onions and fresh parsley for a touch of color and freshness. Let the casserole rest for 5 minutes before serving to allow it to set slightly.
