Description

This Cauliflower Soup is a creamy, comforting, and surprisingly light dish made with simple, wholesome ingredients. Perfect for a cozy lunch or dinner, it offers a nutritious and flavorful meal that’s easy to prepare.

Ingredients

Main Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 large head cauliflower, cut into florets
  • 5 cups vegetable broth
  • ½ tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat the oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the aromatics.
  2. Sauté onion: Add the diced onion to the pot and cook until softened and translucent, about 5 minutes, stirring occasionally to avoid browning.
  3. Add garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, taking care not to burn it.
  4. Add cauliflower and thyme: Incorporate the cauliflower florets and dried thyme into the pot, stirring to combine with the sautéed onion and garlic.
  5. Add broth and boil: Pour in the vegetable broth and bring the mixture to a boil over high heat.
  6. Simmer soup: Reduce the heat to low and let the soup simmer gently for 20 to 25 minutes, until the cauliflower is tender and easily pierced with a fork.
  7. Blend till smooth: Using an immersion blender directly in the pot, or transferring in batches to a countertop blender, puree the soup until smooth and creamy.
  8. Season and finish: Taste and season the soup with salt and black pepper as desired.
  9. Garnish and serve: Ladle the soup into bowls and sprinkle with fresh chopped parsley before serving warm for a comforting meal.

Notes

  • Add a splash of milk or cream for a richer, creamier texture.
  • Top with roasted cauliflower florets for added texture and flavor contrast.
  • Store any leftovers in an airtight container in the refrigerator for up to 4 days.
