Ingredients
Chicken and Vegetables
- 700 g cooked shredded chicken
- 1 large head cauliflower, cut into florets
- 2 green onions, sliced
Dairy and Sauces
- 225 g cream cheese, softened
- 1/2 cup buffalo hot sauce
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella
Extras
- 1/2 cup cooked bacon, crumbled (optional)
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 190°C to prepare for baking the casserole.
- Cook Cauliflower: Steam or boil the cauliflower florets for 4 to 5 minutes until slightly tender but not mushy. Drain thoroughly and pat dry to avoid excess moisture in the casserole.
- Prepare Sauce: In a large bowl, combine softened cream cheese, buffalo hot sauce, sour cream, garlic powder, smoked paprika, salt, and black pepper. Mix until smooth and well blended.
- Mix Chicken and Cauliflower: Stir the shredded chicken into the sauce mixture. Then fold in the cooked cauliflower along with half of the shredded cheddar and mozzarella cheeses.
- Assemble Casserole: Transfer the mixture into a greased baking dish. Evenly sprinkle the remaining cheddar and mozzarella cheeses on top. Add crumbled cooked bacon if you choose to use it.
- Bake: Bake the casserole in the preheated oven for 25 to 30 minutes until the casserole is hot, bubbly, and the cheese on top is melted and golden brown.
- Garnish and Serve: Remove from oven and garnish with sliced green onions. Let the casserole rest for about 5 minutes before serving to set and enhance flavors.
Notes
- Drain the cauliflower thoroughly after steaming or boiling to prevent a watery casserole.
- Using rotisserie chicken can speed up preparation and add flavor.
- Adjust the amount of buffalo sauce based on your preferred spice level for more or less heat.
- Serve with celery sticks, cucumber slices, or a simple green salad for a complete meal.
- For added flavor, blue cheese crumbles make an excellent optional topping.
