Ingredients

Chicken and Vegetables

  • 700 g cooked shredded chicken
  • 1 large head cauliflower, cut into florets
  • 2 green onions, sliced

Dairy and Sauces

  • 225 g cream cheese, softened
  • 1/2 cup buffalo hot sauce
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella

Extras

  • 1/2 cup cooked bacon, crumbled (optional)
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste


Instructions

  1. Preheat Oven: Preheat your oven to 190°C to prepare for baking the casserole.
  2. Cook Cauliflower: Steam or boil the cauliflower florets for 4 to 5 minutes until slightly tender but not mushy. Drain thoroughly and pat dry to avoid excess moisture in the casserole.
  3. Prepare Sauce: In a large bowl, combine softened cream cheese, buffalo hot sauce, sour cream, garlic powder, smoked paprika, salt, and black pepper. Mix until smooth and well blended.
  4. Mix Chicken and Cauliflower: Stir the shredded chicken into the sauce mixture. Then fold in the cooked cauliflower along with half of the shredded cheddar and mozzarella cheeses.
  5. Assemble Casserole: Transfer the mixture into a greased baking dish. Evenly sprinkle the remaining cheddar and mozzarella cheeses on top. Add crumbled cooked bacon if you choose to use it.
  6. Bake: Bake the casserole in the preheated oven for 25 to 30 minutes until the casserole is hot, bubbly, and the cheese on top is melted and golden brown.
  7. Garnish and Serve: Remove from oven and garnish with sliced green onions. Let the casserole rest for about 5 minutes before serving to set and enhance flavors.
