Ingredients
Chicken and Dairy
- 2 cups cooked chicken, shredded
- 1 package Boursin cheese (5 oz)
- 1 cup heavy cream
- 2 tablespoons butter
Vegetables & Aromatics
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
Liquids & Seasoning
- 4 cups chicken broth
- Salt and black pepper to taste
Instructions
- Melt Butter and Sauté Vegetables: Melt 2 tablespoons of butter in a large pot over medium heat. Add the chopped onion, minced garlic, diced carrots, and diced celery, cooking until the vegetables are softened and fragrant, about 5-7 minutes.
- Add Chicken Broth and Simmer: Pour in 4 cups of chicken broth, stirring well, and bring the mixture to a gentle simmer to blend the flavors and further soften the vegetables.
- Add Shredded Chicken: Stir in the 2 cups of shredded cooked chicken into the pot. Allow the soup to simmer for an additional 5 minutes to heat the chicken through and meld flavors.
- Melt Boursin Cheese into Soup: Gradually stir in the entire 5 oz package of Boursin cheese, mixing until it is fully melted into the broth, creating a creamy, flavorful base.
- Incorporate Heavy Cream: Pour in 1 cup of heavy cream and mix thoroughly to combine. Be sure to keep the heat low and avoid boiling once the cream has been added to prevent curdling.
- Season to Taste: Add salt and freshly ground black pepper according to your preference, stirring well to distribute the seasoning evenly throughout the soup.
- Serve Warm: Ladle the creamy Boursin chicken soup into bowls immediately and serve warm for the best flavor and comfort.
Notes
- For added nutrition and color, incorporate fresh spinach or kale during the last few minutes of cooking.
- Using rotisserie chicken is a convenient shortcut that adds great flavor and saves time.
- Do not boil the soup after adding the heavy cream to prevent it from breaking or curdling.
