Description
Cream of Potato Soup is a rich and hearty soup featuring tender potatoes cooked with onions and garlic, simmered in a flavorful broth, then blended to a smooth, creamy consistency. This comforting homemade soup is perfect for warming up on chilly days and can be customized with various toppings for added flavor.
Ingredients
Main Ingredients
- 4 medium potatoes, peeled and diced
- 1 tablespoon butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup milk or cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped parsley (optional)
Instructions
- Melt Butter: Melt the butter in a large pot over medium heat until fully melted, creating a base to sauté the vegetables.
- Sauté Onions: Add the chopped onion to the pot and cook until softened and translucent, about 3-5 minutes, stirring occasionally.
- Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, taking care not to burn it.
- Add Potatoes and Broth: Add the diced potatoes to the pot, then pour in the chicken or vegetable broth. Bring the mixture to a boil.
- Simmer Potatoes: Once boiling, reduce the heat to low and simmer for 15–20 minutes or until the potatoes are tender when pierced with a fork.
- Create Creamy Texture: Blend part of the soup using an immersion blender or carefully transfer a portion to a blender and puree, then return to the pot. Alternatively, mash some potatoes directly in the pot to thicken the soup while retaining some texture.
- Add Dairy and Season: Stir in the milk or cream, then season with salt and black pepper to taste.
- Final Simmer: Simmer the soup gently for another 5 minutes to allow flavors to meld and the soup to warm through.
- Garnish and Serve: Sprinkle chopped parsley on top if desired and serve hot. Consider pairing with crusty bread or optional toppings like shredded cheese or crispy bacon.
Notes
- Top with shredded cheese or crispy bacon for added flavor and texture.
- Use half-and-half instead of milk or cream for a richer, creamier soup.
- This soup is best served hot and pairs wonderfully with fresh bread.
