Pantry Items
- 2 tbsp olive oil
- 2 cans chickpeas, drained
- 6 cups vegetable broth
- 1 tsp thyme
- Salt & pepper, to taste

- Add Broth and Chickpeas: Pour in 6 cups of vegetable broth and add the drained chickpeas along with 1 teaspoon of thyme. Stir well to combine and bring the mixture to a gentle simmer.
- Simmer Soup: Allow the soup to simmer for 20 minutes to let the flavors meld and the vegetables to become tender.
- Add Kale: Stir in the chopped kale and continue cooking the soup for an additional 5 minutes until the kale is wilted and tender.
- Season and Serve: Season the soup with salt and pepper to taste. Serve warm and enjoy a cozy, nutrient-packed meal.
