Instructions

  1. Prepare the Marinade: In a bowl, whisk together the olive oil, lime juice, lime zest, minced garlic, chopped cilantro, ground cumin, chili powder, paprika, salt, and black pepper until well combined to create a flavorful marinade.
  2. Marinate the Chicken: Place the chicken thighs or breasts in the marinade, making sure they are fully coated. Refrigerate and let them marinate for at least 30 minutes, or up to 8 hours to enhance the flavor and tenderness.
  3. Preheat Cooking Surface: Heat a grill or skillet over medium-high heat until hot and ready for cooking.
  4. Cook the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Cook the chicken for 5–7 minutes on each side, or until the internal temperature reaches 165°F (74°C), ensuring it is fully cooked and juicy.
  5. Rest the Chicken: Transfer the cooked chicken to a plate and let it rest for 5 minutes to retain its juices and improve tenderness before slicing.
