Ingredients
Chicken
- 2 lbs boneless, skinless chicken thighs or breasts
Marinade
- 3 tablespoons olive oil
- Juice and zest of 2 limes
- 3 garlic cloves, minced
- ½ cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon paprika
- Salt and black pepper, to taste
Instructions
- Prepare the Marinade: In a bowl, whisk together the olive oil, lime juice, lime zest, minced garlic, chopped cilantro, ground cumin, chili powder, paprika, salt, and black pepper until well combined to create a flavorful marinade.
- Marinate the Chicken: Place the chicken thighs or breasts in the marinade, making sure they are fully coated. Refrigerate and let them marinate for at least 30 minutes, or up to 8 hours to enhance the flavor and tenderness.
- Preheat Cooking Surface: Heat a grill or skillet over medium-high heat until hot and ready for cooking.
- Cook the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Cook the chicken for 5–7 minutes on each side, or until the internal temperature reaches 165°F (74°C), ensuring it is fully cooked and juicy.
- Rest the Chicken: Transfer the cooked chicken to a plate and let it rest for 5 minutes to retain its juices and improve tenderness before slicing.
- Serve: Garnish with additional chopped cilantro and lime wedges. Serve alongside your favorite rice, salad, or as a filling in tacos or wraps.
