Description

Chopped Salad Pizza is a delightful fusion of crispy baked pizza crust topped with melted mozzarella and finished with a vibrant, crunchy chopped salad tossed in a zesty red wine vinaigrette. This fresh and light pizza offers a perfect balance of warm, cheesy goodness and crisp, tangy salad, making it an ideal choice for lunch, dinner, or casual gatherings.

Ingredients

Pizza

  • 1 prepared pizza crust
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese

Chopped Salad

  • 2 cups chopped romaine lettuce
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, diced
  • ¼ cup sliced black olives
  • ¼ cup grated Parmesan cheese

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven according to the instructions on your prepared pizza crust packaging to ensure the crust bakes properly.
  2. Assemble Pizza: Spread the pizza sauce evenly over the crust and then sprinkle the shredded mozzarella cheese on top, covering the surface well.
  3. Bake Pizza: Place the pizza in the oven and bake until the crust turns golden brown and the cheese is melted and bubbly, approximately 12-15 minutes depending on your oven and crust instructions.
  4. Prepare Dressing: While the pizza bakes, whisk together olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and black pepper in a bowl until well combined to make the vinaigrette dressing.
  5. Toss Salad: In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, black olives, and grated Parmesan cheese. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  6. Top Pizza with Salad: Once the pizza is baked and still warm, evenly top it with the dressed chopped salad just before serving to maintain the salad’s crisp texture.
  7. Serve: Slice the pizza and enjoy immediately for the best combination of warm crust and fresh salad.

Notes

  • Add grilled chicken for extra protein to make it more filling.
  • Serve the chopped salad separately if preparing the pizza in advance to keep the salad fresh and crisp.
