Description

A hearty grilled burrito packed with seasoned chicken, cooked rice, black beans, cheddar cheese, and smoky chipotle ranch dressing. This Mexican-inspired burrito is toasted on a grill pan for a crispy outside and melty inside, making for a quick and satisfying meal full of bold, savory flavors.

Ingredients

Filling

  • 2 cups cooked chicken, shredded or diced
  • 1 cup cooked rice
  • ½ cup black beans, drained and rinsed
  • ¼ cup chipotle ranch dressing (divided)

Toppings

  • 1 cup shredded cheddar cheese
  • ½ cup lettuce, shredded
  • ¼ cup diced tomatoes

Wrap

  • 4 large flour tortillas

Instructions

  1. Warm Tortillas: Warm the flour tortillas in a dry skillet or microwave for about 20 seconds until they become pliable and easy to fold without cracking.
  2. Prepare Filling: In a medium bowl, combine the shredded or diced chicken, cooked rice, black beans, and half of the chipotle ranch dressing. Mix well to evenly coat all ingredients with the sauce.
  3. Assemble Burritos: Lay each warmed tortilla flat and evenly divide the filling mixture among them, placing it in the center. Then, top each with shredded cheddar cheese, shredded lettuce, diced tomatoes, and the remaining chipotle ranch dressing.
  4. Roll Burritos: Fold in the sides of each tortilla and roll tightly from one end to the other to form secure burritos, ensuring the filling stays inside.
  5. Grill Burritos: Heat a skillet or grill pan over medium heat. Place the burritos seam side down and grill for 2–3 minutes per side until the tortillas are golden brown, crispy, and the cheese inside is melted.
  6. Serve: Remove from heat and serve the burritos warm, optionally with extra chipotle ranch or your favorite salsa on the side.

Notes

  • Add sliced avocado or jalapeños inside for extra creamy texture and a spicy kick.
  • Use brown rice instead of white rice for additional fiber and a nuttier flavor.
  • Be sure to wrap the burritos tightly to prevent the filling from spilling out while grilling.
