Description

Chipotle Lime Grilled Chicken with Mango Salsa features juicy, smoky grilled chicken breasts marinated in a vibrant blend of chipotle chili powder, lime, and spices, topped with a fresh and sweet mango salsa. This dish perfectly balances smoky, spicy, and fruity flavors, making it a refreshing and satisfying main course ideal for summer meals.

Ingredients

For the Chicken

  • 1 1/2 lbs (680 g) boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 2 garlic cloves, minced
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Mango Salsa

  • 1 large mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 small red onion, finely diced
  • 1 jalapeño, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Marinade: Whisk together olive oil, fresh lime juice, chipotle chili powder, smoked paprika, cumin, minced garlic, honey, salt, and black pepper in a bowl until well combined.
  2. Marinate the Chicken: Add the boneless, skinless chicken breasts to the marinade and coat thoroughly. Cover and let marinate for at least 20 minutes to absorb the flavors.
  3. Make the Mango Salsa: In a separate bowl, combine diced mango, red bell pepper, finely diced red onion, jalapeño, chopped cilantro, fresh lime juice, and salt. Mix well and refrigerate until ready to serve.
  4. Preheat the Grill: Heat your grill to medium-high heat to ensure a nice sear and proper cooking temperature for the chicken.
  5. Grill the Chicken: Place the marinated chicken breasts on the grill. Cook for 5–7 minutes on each side depending on thickness, or until the internal temperature reaches 165°F (74°C) to ensure they are safely cooked through.
  6. Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute, keeping the chicken moist and flavorful.
  7. Serve: Slice the chicken breasts and top generously with the chilled mango salsa. Serve with lime wedges for an extra burst of citrus brightness.

Notes

  • Pound thick chicken breasts slightly to ensure even cooking.
  • Add diced avocado to the mango salsa for a creamy texture variation.
  • Serve alongside rice, quinoa, black beans, or grilled vegetables to complement flavors.
  • Adjust the amount of jalapeño and chipotle chili powder to suit your preferred spice level.
