Ingredients
Skewers
- 16 large prawns, peeled, deveined, and butterflied
- 8 slices streaky bacon, halved
- 8 skewers
Glaze
- 2 tablespoons olive oil
- 1 tablespoon sweet chili sauce
- 1 teaspoon smoked paprika
- ½ teaspoon chili flakes
- 1 garlic clove, minced
- Salt and black pepper, to taste
For Serving
- Lemon wedges
Instructions
- Preheat the grill: Set your grill to medium-high heat to prepare for cooking the skewers evenly without burning.
- Prepare the prawns: Wrap each butterflied prawn with half a slice of streaky bacon, then carefully thread them onto the skewers, ensuring even spacing for uniform cooking.
- Make the glaze: In a small bowl, combine olive oil, sweet chili sauce, smoked paprika, chili flakes, and minced garlic, then season with salt and black pepper to taste.
- Brush the skewers: Generously coat the bacon-wrapped prawns on all sides with the prepared chili glaze to infuse flavor and help caramelize during grilling.
- Grill the skewers: Place the skewers on the preheated grill and cook for 3–4 minutes per side, turning carefully until the bacon is crisp and prawns are cooked through.
- Serve: Remove from grill and serve immediately with fresh lemon wedges for an added citrusy brightness.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Adjust the amount of chili flakes to your preferred spice level for milder or hotter skewers.
- These skewers are delicious served alongside garlic aioli or a fresh green salad.
