Description

These Chilli, Bacon & Butterflied Prawn Skewers are smoky, spicy, and packed with bold flavor. Juicy prawns wrapped in crispy bacon and brushed with a chili glaze make an irresistible appetizer or barbecue favorite that’s perfect for sharing.

Ingredients

Prawns and Bacon

  • 16 large prawns, peeled, deveined, and butterflied
  • 8 slices streaky bacon, halved
  • 8 skewers

Glaze

  • 2 tablespoons olive oil
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili flakes
  • 1 garlic clove, minced
  • Salt and black pepper, to taste

To Serve

  • Lemon wedges, for serving

Instructions

  1. Preheat the Grill: Preheat your grill to medium-high heat to ensure it’s hot enough to crisp the bacon and cook the prawns evenly.
  2. Prepare the Skewers: Wrap each butterflied prawn with half a slice of streaky bacon and thread onto the skewers, making sure they are secure.
  3. Make the Glaze: In a small bowl, combine the olive oil, sweet chili sauce, smoked paprika, chili flakes, minced garlic, salt, and black pepper. Mix well until fully incorporated.
  4. Brush the Skewers: Generously brush the chili glaze over the prawn and bacon-wrapped skewers to coat them with flavor.
  5. Grill the Skewers: Place the skewers on the grill and cook for 3–4 minutes per side, turning carefully, until the bacon is crisp and the prawns are opaque and cooked through.
  6. Serve: Remove from the grill and serve immediately with fresh lemon wedges for squeezing over the top.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Adjust the amount of chili flakes to suit your preferred spice level.
  • These skewers are delicious when served alongside garlic aioli or a fresh crisp salad.
