Description

This Chickpea Greek Salad is a vibrant and healthy Mediterranean-inspired dish featuring tender chickpeas, crisp cucumbers, juicy cherry tomatoes, Kalamata olives, and creamy feta cheese. Tossed in a zesty homemade lemon-herb dressing, it serves as a refreshing side or a light lunch that’s quick to prepare and full of fresh flavors.

Ingredients

Salad:

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 ½ cups cherry tomatoes, halved
  • 1 large cucumber, diced
  • ½ red onion, thinly sliced
  • ¾ cup Kalamata olives
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped (optional)

Dressing:

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 small garlic clove, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the chickpeas: Drain and rinse the chickpeas thoroughly under cold water, then pat them dry with a towel to remove excess moisture for better salad texture.
  2. Combine salad ingredients: In a large mixing bowl, add the chickpeas, halved cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, chopped parsley, and optional chopped dill.
  3. Make the dressing: In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, red wine vinegar, dried oregano, minced garlic, salt, and black pepper until well combined and emulsified.
  4. Toss the salad: Pour the dressing over the salad mixture. Gently toss everything together until the ingredients are evenly coated with the dressing.
  5. Add feta cheese: Sprinkle the crumbled feta cheese over the salad and gently toss again to incorporate without breaking the cheese too much.
  6. Let rest: Allow the salad to sit for 10 to 15 minutes so the flavors can meld and develop fully.
  7. Serve: Enjoy the salad chilled or at room temperature as a light lunch or flavorful side dish.

Notes

  • Rinse and drain chickpeas well to ensure the salad does not become too watery.
  • Add feta cheese just before serving to prevent it from crumbling excessively.
  • Customize by adding diced bell peppers, avocado, or fresh mint for extra flavor and texture.
  • This salad can be made ahead of time and refrigerated for a few hours before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days for best freshness.
