Instructions
- Combine Salad Ingredients: Add the drained and rinsed chickpeas, diced cucumber, halved cherry tomatoes, diced red bell pepper, finely diced red onion, chopped parsley, and chopped mint to a large mixing bowl.
- Prepare Dressing: In a small bowl, whisk together olive oil, fresh lemon juice, red wine vinegar, Dijon mustard, honey or maple syrup, minced garlic, dried oregano, salt, and black pepper until well combined.
- Toss Salad with Dressing: Pour the prepared dressing over the salad ingredients and gently toss to evenly coat all the components with the dressing.
- Add Feta Cheese: If using feta cheese, sprinkle it over the salad and toss gently once more to incorporate.
