- 2 cups cooked shredded chicken
Vegetables
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 cup green beans or peas
Liquids and Seasonings
- 4 cups chicken broth
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Sauté Vegetables: In a pot, heat a small amount of oil and sauté the diced onion, sliced carrots, and chopped celery for about 5 minutes until they begin to soften and release their aroma.
- Add Broth and Chicken: Pour in the chicken broth and add the cooked shredded chicken along with 1 teaspoon of thyme. Bring the mixture to a simmer to meld flavors.
- Cook Green Vegetables: Stir in the green beans or peas, then continue cooking the soup for an additional 10 minutes to ensure the vegetables are tender.
- Season and Serve: Taste the soup and season with salt and pepper as desired. Serve warm as a light yet hearty meal.
