Description

A wholesome, classic Chicken Vegetable Soup loaded with fresh vegetables and tender chicken — light yet hearty enough for a full meal, perfect for a nutritious and comforting dish.

Ingredients

Chicken

  • 2 cups cooked shredded chicken

Vegetables

  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup green beans or peas

Liquids and Seasonings

  • 4 cups chicken broth
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Sauté Vegetables: In a pot, heat a small amount of oil and sauté the diced onion, sliced carrots, and chopped celery for about 5 minutes until they begin to soften and release their aroma.
  2. Add Broth and Chicken: Pour in the chicken broth and add the cooked shredded chicken along with 1 teaspoon of thyme. Bring the mixture to a simmer to meld flavors.
  3. Cook Green Vegetables: Stir in the green beans or peas, then continue cooking the soup for an additional 10 minutes to ensure the vegetables are tender.
  4. Season and Serve: Taste the soup and season with salt and pepper as desired. Serve warm as a light yet hearty meal.

Notes

  • Great for clearing out fridge veggies by adding whatever vegetables you have on hand.
  • Add pasta or rice for extra heartiness and to make the soup more filling.
