Description

A hearty and satisfying Japanese fusion dish featuring crispy chicken katsu served over tender ramen noodles in a rich, flavorful broth. This recipe balances crunchy textures with savory umami flavors, perfect for a comforting meal.

Ingredients

Chicken Katsu

  • 2 chicken breasts
  • 1/2 cup flour
  • 1 egg
  • 1 cup panko breadcrumbs
  • Oil for frying

Ramen Broth and Noodles

  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon miso paste
  • 2 packs ramen noodles

Garnishes

  • 1 soft-boiled egg
  • 1 green onion, sliced

Instructions

  1. Prepare the Chicken Katsu: Pound the chicken breasts until they are an even thickness for even cooking. Coat each breast first in flour, then dip into beaten egg, and finally coat thoroughly with panko breadcrumbs.
  2. Fry the Chicken: Heat oil in a frying pan over medium heat. Fry the breaded chicken breasts until they turn golden brown and are cooked through, about 5-7 minutes per side depending on thickness. Remove and slice into strips.
  3. Heat the Broth: In a separate pot, warm the chicken broth. Stir in the soy sauce and miso paste until fully dissolved and the broth is aromatic and savory.
  4. Cook the Ramen Noodles: Cook ramen noodles in boiling water according to package instructions, usually about 3-4 minutes. Drain the noodles well.
  5. Assemble the Bowl: Divide cooked noodles into serving bowls. Ladle the hot broth over the noodles. Arrange the sliced chicken katsu on top, then garnish with a halved soft-boiled egg and sliced green onions for freshness and extra flavor.

Notes

  • Maintain a steady medium oil temperature when frying to ensure a crispy and non-greasy chicken katsu.
  • Add a drizzle of chili oil to the broth or on top for extra heat and depth of flavor.
  • For a richer, creamier broth, substitute the chicken broth with tonkotsu broth.
