Description

A cheesy, crunchy, and comforting casserole made with shredded chicken and crunchy nacho cheese Doritos, perfect for an easy and satisfying family dinner.

Ingredients

Chicken Mixture

  • 2 cups cooked chicken (shredded)
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 cup corn (optional)

Other Ingredients

  • 1 bag nacho cheese Doritos (crushed)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it reaches the perfect baking temperature while you prepare the casserole.
  2. Mix Ingredients: In a large bowl, combine the shredded cooked chicken, cream of chicken soup, sour cream, milk, and corn if using. Stir well until all ingredients are evenly mixed.
  3. Layer Doritos: Spread half of the crushed Doritos evenly at the bottom of a baking dish to form the first crunchy layer.
  4. Add Chicken Mixture: Spread the prepared chicken mixture evenly over the first layer of Doritos, ensuring good coverage.
  5. Top with Doritos: Sprinkle the remaining crushed Doritos evenly over the chicken mixture to create a crispy topping layer.
  6. Add Cheese: Generously sprinkle shredded cheddar cheese over the top of the Doritos layer for a cheesy finish.
  7. Bake: Place the baking dish in the oven and bake for 25 to 30 minutes, until the casserole is bubbly and the cheese on top is melted and slightly golden.
  8. Cool and Serve: Remove the casserole from the oven and let it cool slightly for a few minutes before serving to allow it to set.

Notes

  • Use rotisserie chicken for convenience and a richer flavor.
  • Add jalapeños or chopped green chilies to the chicken mixture for extra spice and heat.
  • You can substitute the cream of chicken soup with a homemade white sauce if preferred.
  • For a lighter version, use reduced-fat sour cream and cheese.
