Description

Ingredients

  • 700 g boneless, skinless chicken breasts, cooked and shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, diced

  • 2 green onions, sliced
  • Fresh cilantro, for garnish

  • 2 cups cooked rice

Cheese

  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese

  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper


Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 190°C (375°F) and lightly grease a baking dish to prevent sticking.
  2. Combine Main Ingredients: In a large bowl, mix the shredded chicken, cooked rice, black beans, corn, diced red bell pepper, diced onion, and salsa until well combined.
  3. Add Seasonings: Sprinkle in the cumin, chili powder, paprika, garlic powder, salt, and black pepper, then mix thoroughly until all ingredients are evenly seasoned.
  4. Transfer to Casserole Dish: Spread the mixture evenly into the prepared baking dish to form an even layer.
  5. Add Cheese: Sprinkle shredded cheddar and Monterey Jack cheeses evenly over the top of the casserole mixture.
  6. Cover and Bake: Cover the dish with foil and bake in the preheated oven for 20 minutes to heat through.
  7. Finish Baking: Remove the foil and bake for an additional 10 to 15 minutes, or until the cheese is melted, bubbly, and slightly golden.
