Description

A hearty and nutritious Mediterranean-inspired chicken and chickpea soup combining tender chicken breasts, protein-rich chickpeas, aromatic vegetables, and warm spices in a comforting broth. This wholesome, filling soup is perfect for a healthy family meal or meal prep.

Ingredients

Protein

  • 2 chicken breasts
  • 1 can chickpeas (drained and rinsed, about 15 oz)

Vegetables and Aromatics

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • Fresh cilantro or parsley, for garnish

Liquids and Seasonings

  • 6 cups chicken broth
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and diced carrot. Cook, stirring occasionally, until the vegetables are soft and fragrant, about 5-7 minutes.
  2. Add Chicken and Broth: Place the chicken breasts in the pot and pour in the chicken broth. Increase the heat and bring the mixture to a boil.
  3. Simmer Chicken: Reduce heat to low and let the soup simmer until the chicken is cooked through, approximately 15-20 minutes.
  4. Shred Chicken: Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
  5. Add Chickpeas and Spices: Stir in the drained chickpeas, cumin, and paprika. Simmer the soup for another 10-15 minutes to allow the flavors to meld together.
  6. Season and Garnish: Taste the soup and adjust salt and pepper as needed. Serve hot garnished with fresh cilantro or parsley.

Notes

  • Add spinach or kale to the soup for extra nutrients and color.
  • Use pre-cooked rotisserie chicken to reduce cooking time significantly.
  • Adjust the amount of cumin and paprika to change the flavor intensity to your liking.
