Instructions
- Sauté Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and diced carrot. Cook, stirring occasionally, until the vegetables are soft and fragrant, about 5-7 minutes.
- Add Chicken and Broth: Place the chicken breasts in the pot and pour in the chicken broth. Increase the heat and bring the mixture to a boil.
- Simmer Chicken: Reduce heat to low and let the soup simmer until the chicken is cooked through, approximately 15-20 minutes.
- Shred Chicken: Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
- Add Chickpeas and Spices: Stir in the drained chickpeas, cumin, and paprika. Simmer the soup for another 10-15 minutes to allow the flavors to meld together.
- Season and Garnish: Taste the soup and adjust salt and pepper as needed. Serve hot garnished with fresh cilantro or parsley.
