Description

A bold and indulgent fusion dish combining chewy udon noodles with spicy kimchi, crispy bacon, and melted cheese. This savory, slightly tangy, and umami-packed meal is incredibly satisfying and hard to resist.

Ingredients

Main Ingredients

  • 200 g udon noodles
  • 100 g bacon, chopped
  • 1 cup kimchi, chopped
  • 1 tablespoon kimchi juice
  • 1 tablespoon butter or oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 cup shredded mozzarella cheese
  • 1 green onion, sliced

Instructions

  1. Cook Udon Noodles: Cook the udon noodles according to the package instructions until tender. Drain well and set aside to prevent them from sticking.
  2. Cook Bacon: In a pan over medium heat, cook the chopped bacon until it becomes crispy. If there’s excess fat, remove some to keep the dish balanced.
  3. Sauté Garlic: Add the minced garlic to the pan with the bacon and sauté until it becomes fragrant, about 30 seconds to 1 minute, making sure not to burn it.
  4. Add Kimchi: Stir in the chopped kimchi and continue stir-frying for 2 to 3 minutes, allowing the flavors to meld and the kimchi to soften slightly.
  5. Season: Add the soy sauce, sugar, and kimchi juice to the pan, stirring well to combine all the flavors uniformly.
  6. Add Noodles: Add the cooked udon noodles to the pan. Toss everything together to ensure the noodles are fully coated with the sauce and ingredients.
  7. Melt Cheese: Sprinkle shredded mozzarella cheese evenly over the noodles, then cover the pan with a lid to let the cheese melt thoroughly, creating a creamy and cheesy texture.
  8. Garnish and Serve: Once the cheese is melted, remove the pan from heat. Garnish with sliced green onions and serve the dish hot for the best flavor experience.

Notes

  • Use aged kimchi for a stronger, more complex flavor.
  • Adjust spice level by adding chili flakes if you prefer more heat.
  • Substitute bacon with mushrooms to make a vegetarian version of the dish.
