Soup Base
- 2 tbsp butter
- 1 small onion, diced
- 2 tbsp flour
- 2 cups chicken broth
- 2 cups milk
- Salt and pepper to taste
Main Ingredients
- 2 cups diced ham
- 3 potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
Instructions
- Sauté Onion: In a pot, melt the butter over medium heat and sauté the diced onion until it becomes soft and translucent, usually about 3-5 minutes.
- Make the Roux: Stir in the flour with the butter and onion mixture to create a roux, and cook for about 1 minute to eliminate the raw flour taste, stirring constantly.
- Add Broth and Potatoes: Gradually add the chicken broth while stirring, then add the cubed potatoes. Bring to a simmer and cook for 10 to 12 minutes or until the potatoes are tender when pierced with a fork.
- Add Milk, Ham, and Cheese: Stir in the milk, diced ham, and shredded cheddar cheese. Continue to cook and stir until the cheese is fully melted and the soup has thickened to a creamy consistency.
