Description

Cheesy Broccoli Bites are crispy on the outside, tender on the inside, and packed with fresh broccoli, cheddar cheese, and savory seasonings. These bite-sized snacks are perfect as appetizers, lunchbox treats, or healthy side dishes, offering a delicious way to enjoy vegetables.

Ingredients

Main Ingredients

  • 3 cups finely chopped broccoli florets
  • 1½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup breadcrumbs
  • 2 green onions, finely sliced

Seasonings

  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Steam the broccoli: Steam the finely chopped broccoli florets for 3–4 minutes until they are tender but still slightly firm. Allow them to cool slightly to handle.
  3. Combine ingredients: In a large mixing bowl, combine the steamed broccoli with shredded cheddar cheese, grated Parmesan, eggs, breadcrumbs, sliced green onions, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Shape the bites: Using your hands or a spoon, form the mixture into small bite-sized balls or patties, about 1 to 1.5 inches in diameter, shaping them tightly so they hold together.
  5. Arrange on baking sheet: Place the formed bites evenly spaced on the prepared baking sheet, ensuring they have enough room to crisp up during baking.
  6. Bake the bites: Bake in the preheated oven for 20–25 minutes, turning the bites halfway through cooking to ensure even browning. They should be golden and crispy on the outside.
  7. Serve warm: Remove from oven and serve warm with ranch dressing or your favorite dipping sauce. Enjoy immediately for the best texture.

Notes

  • For extra crispiness, air fry the bites at 375°F for 12–15 minutes instead of baking.
  • Uncooked bites can be frozen for future quick meals; simply bake or air fry from frozen.
  • These bites are kid-friendly and great for meal prep, offering a nutritious snack or side.
