Description

Cauliflower Breadsticks are a low-carb and gluten-free snack that offers a healthier twist on traditional breadsticks. Made with riced cauliflower, mozzarella, Parmesan cheese, and Italian seasonings, these breadsticks bake to a crispy, cheesy perfection, making them an excellent appetizer or snack option perfect for dipping in marinara sauce.

Ingredients

Cauliflower Breadsticks

  • 2 cups cauliflower florets
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Rice the Cauliflower: Pulse the cauliflower florets in a food processor until they reach a rice-like texture, ensuring small, fine pieces for the best consistency.
  3. Microwave Cauliflower Rice: Microwave the riced cauliflower for about 4 minutes, which helps to soften it and remove some moisture, then let it cool slightly for handling.
  4. Remove Excess Moisture: Transfer the warmed cauliflower rice to a clean towel and squeeze firmly to extract as much moisture as possible—this is key for the breadsticks to hold together well.
  5. Mix Ingredients: In a mixing bowl, combine the drained cauliflower rice, egg, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, and salt, mixing until uniform.
  6. Shape the Breadsticks: Spread the mixture evenly onto the prepared baking sheet, shaping it into a rectangular form with a uniform thickness to ensure even baking.
  7. Initial Bake: Bake the cauliflower base for 15 minutes until it becomes firm and slightly golden on top, forming the breadstick crust.
  8. Slice and Finish Baking: Remove the base from the oven and slice it into individual breadsticks. Return the sliced breadsticks to the oven and bake for an additional 5 to 7 minutes until they crisp up and develop a golden color.
  9. Garnish and Serve: Optionally, sprinkle chopped parsley on the breadsticks and serve warm with marinara or your favorite dipping sauce.

Notes

  • Ensure to remove as much moisture as possible from the cauliflower to avoid soggy breadsticks.
  • For extra cheesiness, sprinkle some additional shredded mozzarella on top before the final bake.
  • Serve with marinara sauce or a garlic-infused dipping sauce for enhanced flavor.
