Description

This Cast Iron Frittata is a simple yet flavorful breakfast dish made with fluffy eggs, fresh vegetables like spinach, tomatoes, and bell peppers, combined with cheese and herbs. Cooked first on the stovetop in a cast iron skillet and then finished in the oven, it offers a delicious and wholesome meal perfect for breakfast, brunch, or meal prepping.

Ingredients

Egg Mixture

  • 8 large eggs
  • ¼ cup milk
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Vegetables

  • 1 cup baby spinach
  • 1 cup cherry tomatoes, halved
  • ½ cup diced bell pepper
  • ½ small onion, diced

Other Ingredients

  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to have it ready for baking the frittata.
  2. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, Italian seasoning, salt, and black pepper until the mixture is smooth and well combined.
  3. Cook the vegetables: Heat the olive oil in a 10-inch cast iron skillet over medium heat. Add the diced onion and bell pepper and sauté for 4–5 minutes until they soften.
  4. Add the spinach: Stir in the baby spinach and cook until it wilts, which should take a minute or two.
  5. Add eggs to skillet: Pour the egg mixture over the sautéed vegetables in the skillet and gently stir to evenly distribute ingredients.
  6. Top with tomatoes and cheese: Sprinkle the halved cherry tomatoes and shredded cheese evenly across the top of the egg mixture.
  7. Bake the frittata: Transfer the cast iron skillet to the preheated oven and bake for 12–15 minutes or until the eggs are fully set and the cheese is melted.
  8. Garnish and serve: Remove the skillet from the oven, garnish with chopped fresh parsley, slice into portions, and serve warm.

Notes

  • Add cooked bacon, sausage, or mushrooms for extra flavor if desired.
  • A cast iron skillet provides even heat distribution and a beautiful crust on the frittata.
  • Store any leftovers in the refrigerator for up to 4 days, reheating gently before serving.
