Description

Caprese Orzo Salad is a vibrant and refreshing pasta salad featuring tender orzo pasta mixed with juicy cherry tomatoes, creamy fresh mozzarella pearls, and fragrant fresh basil. Tossed in a zesty balsamic vinaigrette, this salad is an ideal light dish for summer picnics, potlucks, barbecues, or any easy, flavorful side.

Ingredients

Salad

  • 8 ounces orzo pasta
  • 1½ cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella pearls
  • ¼ cup fresh basil, chopped

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste

Optional

  • Balsamic glaze for serving

Instructions

  1. Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to the package directions, usually about 8-10 minutes, until al dente. Drain the orzo and rinse it under cold water to cool and stop the cooking process.
  2. Combine Salad Ingredients: In a large mixing bowl, add the cooled orzo, halved cherry tomatoes, fresh mozzarella pearls, and chopped fresh basil. Gently toss to combine all ingredients evenly.
  3. Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, Dijon mustard, salt, and freshly ground black pepper until well emulsified.
  4. Toss Salad with Dressing: Pour the prepared dressing over the orzo salad mixture. Gently toss the salad until all ingredients are evenly coated with the dressing.
  5. Chill Before Serving: Cover the salad and refrigerate for at least 20 minutes to allow the flavors to meld and serve chilled for the best taste.
  6. Optional Garnish: Before serving, drizzle with balsamic glaze if desired for an extra touch of flavor and presentation.

Notes

  • Add grilled chicken to the salad for a complete and satisfying meal.
  • Fresh basil leaves provide the best flavor; avoid dried basil for optimal taste.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
