Ingredients
Salad
- 8 ounces orzo pasta
- 1½ cups cherry tomatoes, halved
- 8 ounces fresh mozzarella pearls
- ¼ cup fresh basil, chopped
Dressing
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
Optional
- Balsamic glaze for serving
Instructions
- Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to the package directions, usually about 8-10 minutes, until al dente. Drain the orzo and rinse it under cold water to cool and stop the cooking process.
- Combine Salad Ingredients: In a large mixing bowl, add the cooled orzo, halved cherry tomatoes, fresh mozzarella pearls, and chopped fresh basil. Gently toss to combine all ingredients evenly.
- Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, Dijon mustard, salt, and freshly ground black pepper until well emulsified.
- Toss Salad with Dressing: Pour the prepared dressing over the orzo salad mixture. Gently toss the salad until all ingredients are evenly coated with the dressing.
- Chill Before Serving: Cover the salad and refrigerate for at least 20 minutes to allow the flavors to meld and serve chilled for the best taste.
- Optional Garnish: Before serving, drizzle with balsamic glaze if desired for an extra touch of flavor and presentation.
Notes
- Add grilled chicken to the salad for a complete and satisfying meal.
- Fresh basil leaves provide the best flavor; avoid dried basil for optimal taste.
