Ingredients

  • 2 ears corn, cut into small pieces

Seasoning and Sauce

  • 4 tablespoons unsalted butter, melted
  • 3 garlic cloves, minced
  • 1 1/2 tablespoons Cajun seasoning
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to prepare for baking the foil packets.
  2. Cook potatoes: Boil the halved baby potatoes for 8–10 minutes until they are just tender but not falling apart, then drain well to remove excess water.
  3. Combine main ingredients: In a large bowl, mix together the peeled shrimp, parboiled potatoes, cut corn pieces, and sliced smoked sausage.
  4. Make the seasoning sauce: Stir melted butter with minced garlic, Cajun seasoning, fresh lemon juice, smoked paprika, and black pepper until well combined.
  5. Toss the mixture: Pour the butter and seasoning mixture over the shrimp and vegetables, tossing everything together until evenly coated with the flavorful sauce.
  6. Prepare foil packets: Divide the shrimp and vegetable mixture evenly among four large sheets of heavy-duty aluminum foil.
  7. Seal and bake: Fold each foil sheet tightly into a sealed packet, place all packets on a baking sheet, then bake for 15–18 minutes, or until the shrimp turn pink and are cooked through.
  8. Serve: Carefully open the foil packets to avoid escaping steam, garnish with chopped fresh parsley, and serve hot with lemon wedges on the side.
