Instructions
- Preheat the oven: Set your oven to 425°F (220°C) to prepare for baking the foil packets.
- Cook potatoes: Boil the halved baby potatoes for 8–10 minutes until they are just tender but not falling apart, then drain well to remove excess water.
- Combine main ingredients: In a large bowl, mix together the peeled shrimp, parboiled potatoes, cut corn pieces, and sliced smoked sausage.
- Make the seasoning sauce: Stir melted butter with minced garlic, Cajun seasoning, fresh lemon juice, smoked paprika, and black pepper until well combined.
- Toss the mixture: Pour the butter and seasoning mixture over the shrimp and vegetables, tossing everything together until evenly coated with the flavorful sauce.
- Prepare foil packets: Divide the shrimp and vegetable mixture evenly among four large sheets of heavy-duty aluminum foil.
- Seal and bake: Fold each foil sheet tightly into a sealed packet, place all packets on a baking sheet, then bake for 15–18 minutes, or until the shrimp turn pink and are cooked through.
