Description

A hearty and flavorful casserole combining tender shredded chicken, roasted sweet potatoes, buffalo sauce, creamy Greek yogurt, and melted cheese. This protein-rich dish offers the perfect balance of spicy, creamy, and savory flavors, making it an ideal comforting meal for dinner.

Ingredients

Chicken and Vegetables

  • 700 g boneless, skinless chicken breasts, cooked and shredded
  • 3 medium sweet potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 2 green onions, sliced

Sauce and Seasonings

  • ¾ cup buffalo sauce
  • ½ cup plain Greek yogurt
  • ½ cup cream cheese, softened
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

Cheeses

  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup crumbled blue cheese, optional

Instructions

  1. Preheat the oven: Preheat your oven to 200°C (400°F) to prepare for roasting and baking.
  2. Roast the sweet potatoes: Place the cubed sweet potatoes on a baking sheet and roast in the oven for 20–25 minutes until they are tender and lightly caramelized.
  3. Prepare the sauce mixture: In a large bowl, combine buffalo sauce, plain Greek yogurt, softened cream cheese, minced garlic, smoked paprika, onion powder, salt, and black pepper. Mix thoroughly until smooth and well combined.
  4. Combine chicken and sweet potatoes: Add the shredded cooked chicken and roasted sweet potatoes into the sauce mixture. Gently fold everything together to ensure all the ingredients are evenly coated with the sauce.
  5. Assemble the casserole: Transfer the buffalo chicken and sweet potato mixture into a greased casserole dish, spreading it out evenly.
  6. Add cheeses: Sprinkle shredded cheddar cheese and mozzarella cheese evenly over the top of the casserole.
  7. Bake the casserole: Bake uncovered in the preheated oven for 20–25 minutes until the casserole is hot and bubbly.
  8. Optional broiling: For a golden, crispy cheese topping, broil for 1–2 minutes but watch carefully to prevent burning.
  9. Garnish and serve: Remove from oven and garnish with sliced green onions and crumbled blue cheese if desired. Let the casserole rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken to save time and enhance flavor.
  • Adjust the amount of buffalo sauce according to your preferred spice level for milder or spicier results.
  • Add vegetables like broccoli or cauliflower to increase nutritional value and add texture.
  • For a lighter version, substitute reduced-fat cream cheese and Greek yogurt.
