Ingredients
Chicken and Vegetables
- 700 g boneless, skinless chicken breasts, cooked and shredded
- 3 medium sweet potatoes, peeled and cubed
- 2 cloves garlic, minced
- 2 green onions, sliced
Sauce and Seasonings
- ¾ cup buffalo sauce
- ½ cup plain Greek yogurt
- ½ cup cream cheese, softened
- ½ tsp smoked paprika
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Cheeses
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup crumbled blue cheese, optional
Instructions
- Preheat the oven: Preheat your oven to 200°C (400°F) to prepare for roasting and baking.
- Roast the sweet potatoes: Place the cubed sweet potatoes on a baking sheet and roast in the oven for 20–25 minutes until they are tender and lightly caramelized.
- Prepare the sauce mixture: In a large bowl, combine buffalo sauce, plain Greek yogurt, softened cream cheese, minced garlic, smoked paprika, onion powder, salt, and black pepper. Mix thoroughly until smooth and well combined.
- Combine chicken and sweet potatoes: Add the shredded cooked chicken and roasted sweet potatoes into the sauce mixture. Gently fold everything together to ensure all the ingredients are evenly coated with the sauce.
- Assemble the casserole: Transfer the buffalo chicken and sweet potato mixture into a greased casserole dish, spreading it out evenly.
- Add cheeses: Sprinkle shredded cheddar cheese and mozzarella cheese evenly over the top of the casserole.
- Bake the casserole: Bake uncovered in the preheated oven for 20–25 minutes until the casserole is hot and bubbly.
- Optional broiling: For a golden, crispy cheese topping, broil for 1–2 minutes but watch carefully to prevent burning.
- Garnish and serve: Remove from oven and garnish with sliced green onions and crumbled blue cheese if desired. Let the casserole rest for 5 minutes before serving.
Notes
- Use rotisserie chicken to save time and enhance flavor.
- Adjust the amount of buffalo sauce according to your preferred spice level for milder or spicier results.
- Add vegetables like broccoli or cauliflower to increase nutritional value and add texture.
- For a lighter version, substitute reduced-fat cream cheese and Greek yogurt.
