Ingredients
Chicken and Vegetables
- 700 g boneless, skinless chicken breasts, cooked and shredded
- 1 large head cauliflower, cut into florets
- 2 cloves garlic, minced
- 2 green onions, sliced
Cheese and Dairy
- ½ cup cream cheese, softened
- ½ cup plain Greek yogurt
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup crumbled blue cheese, optional
Seasonings and Sauce
- ¾ cup buffalo sauce
- ½ tsp smoked paprika
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for baking the casserole later.
- Cook Cauliflower: Steam or boil the cauliflower florets for 4 to 5 minutes until just tender, then drain thoroughly to remove excess water to prevent a watery casserole.
- Mix Sauce Base: In a large bowl, combine the buffalo sauce, softened cream cheese, plain Greek yogurt, minced garlic, smoked paprika, onion powder, salt, and black pepper to create a creamy, spicy sauce.
- Combine Chicken and Cauliflower: Add the shredded cooked chicken and the drained cauliflower into the sauce mixture, gently folding everything together until all pieces are evenly coated with the buffalo cream sauce.
- Assemble Casserole: Transfer the coated chicken and cauliflower mixture into a greased baking dish, spreading it out evenly.
- Add Cheese Topping: Sprinkle shredded cheddar and mozzarella cheeses evenly over the top of the casserole to create a melty, cheesy crust.
- Bake: Place the casserole in the preheated oven and bake uncovered for 20 to 25 minutes until the dish is hot, bubbling, and the cheese is melted.
- Broil for Golden Top: If desired, broil the casserole for 1 to 2 minutes to brown the cheese and create a golden crust, watching carefully to avoid burning.
- Garnish and Serve: Remove from oven and garnish with sliced green onions and optional crumbled blue cheese. Serve warm as a hearty, flavorful main dish.
Notes

- Adjust the amount of buffalo sauce to match your preferred spice tolerance.
- For a lighter version, substitute with reduced-fat cream cheese and Greek yogurt.
