Chicken and Cauliflower
- 500 g boneless, skinless chicken breasts, diced

Instructions
- Preheat the oven: Preheat your oven to 220°C (425°F) to prepare for roasting the cauliflower.

- Cook the chicken: While the cauliflower roasts, heat the remaining olive oil in a large skillet over medium-high heat. Add the diced chicken and cook for 6–8 minutes, stirring occasionally, until fully cooked through with no pink remaining.
- Coat chicken in buffalo sauce: Pour the buffalo hot sauce over the cooked chicken in the skillet. Stir well to coat all pieces thoroughly, infusing the chicken with spicy flavor.
- Prepare the dressing: In a small bowl, whisk together the plain Greek yogurt, buffalo sauce, lemon juice, water, garlic powder, and a pinch of salt until smooth and creamy. This tangy dressing adds a cool contrast to the spicy filling.
- Assemble the wraps: Lay out the large romaine or butter lettuce leaves on a serving plate. Distribute the buffalo chicken and roasted cauliflower evenly into each leaf.
- Add finishing touches: Drizzle the prepared yogurt dressing over the filled lettuce wraps and garnish with crumbled blue cheese (if using) and sliced green onions for an extra burst of flavor and texture.
