Description

Crispy hasselback potatoes brushed with nutty brown butter and topped with sweet caramelized onions, creating a rich and elegant side dish perfect for any meal.

Ingredients

Potatoes

  • 4 medium potatoes

Brown Butter

  • 4 tablespoons butter

Caramelized Onions

  • 2 onions, thinly sliced
  • 2 tablespoons olive oil

Seasoning

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for baking the potatoes.
  2. Prepare Potatoes: Slice each potato thinly across its width but be careful not to cut all the way through, allowing the slices to fan out during baking.
  3. Make Brown Butter: Melt the butter in a pan over medium heat until it turns golden brown and develops a nutty aroma.
  4. Season Potatoes: Brush the sliced potatoes generously with the brown butter, and sprinkle with salt and black pepper to taste.
  5. Bake Potatoes: Place the potatoes on a baking tray and bake in the preheated oven for 40–50 minutes until the potatoes are tender inside and crispy on the edges.
  6. Caramelize Onions: While the potatoes bake, heat olive oil in a pan over low heat and cook the thinly sliced onions slowly, stirring frequently, until they become golden brown and caramelized, about 20-30 minutes.
  7. Serve: Once the potatoes are baked, top them with the warm caramelized onions and serve immediately for a delicious side dish.

Notes

  • Place chopsticks or wooden spoons on each side of the potatoes before slicing to prevent cutting all the way through.
  • Baste the potatoes with the brown butter mid-way through baking for extra crispiness.
  • For variation, add grated cheese like Parmesan or fresh herbs such as thyme or rosemary.
