Description

Broccoli Cheddar Stuffed Chicken features juicy chicken breasts filled with tender broccoli and melted cheddar cheese, baked to golden perfection. This simple and comforting main dish delivers a delicious combination of savory flavors, making it a perfect easy dinner option.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Filling

  • 2 cups broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 2 tbsp cream cheese, softened
  • 2 cloves garlic, minced

Optional Topping

  • ½ cup shredded Parmesan cheese

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to ensure it’s ready once the chicken is stuffed and seasoned.
  2. Prepare Broccoli: Steam or microwave the finely chopped broccoli florets for 2–3 minutes until they become slightly tender. Allow them to cool before mixing.
  3. Make Filling: In a mixing bowl, combine the cooled broccoli with shredded cheddar cheese, softened cream cheese, and minced garlic, stirring until well incorporated.
  4. Create Chicken Pockets: Carefully slice a pocket into the thickest part of each chicken breast, taking care not to cut all the way through, so the filling can be stuffed inside.
  5. Stuff Chicken Breasts: Fill each pocket generously with the broccoli and cheese mixture. If necessary, secure the openings with toothpicks to keep the filling inside while baking.
  6. Season Chicken: Rub the entire exterior of each chicken breast with olive oil, then sprinkle with paprika, Italian seasoning, salt, and black pepper evenly.
  7. Prepare for Baking: Place the stuffed and seasoned chicken breasts in a lightly greased baking dish. If using, sprinkle the tops with shredded Parmesan cheese for an extra savory crust.
  8. Bake: Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (74°C), ensuring the meat is fully cooked and juices run clear.
  9. Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes to allow the juices to redistribute before serving.

Notes

  • Do not overstuff the chicken to prevent filling spillage during baking.
  • You can substitute mozzarella or Monterey Jack cheese for cheddar for a different flavor profile.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
  • To secure the stuffed pockets, use toothpicks and remember to remove them before serving.
