Description

Beef Fried Rice is a quick and satisfying Chinese-inspired main course made with tender strips of beef, fresh vegetables, eggs, and chilled long-grain rice tossed in a savory soy and oyster sauce blend. This easy recipe utilizes leftover rice to create a flavorful, hearty meal that’s ready in just 30 minutes, perfect for a weeknight dinner.

Ingredients

Beef

  • 1 pound flank steak or sirloin, thinly sliced
  • ¼ teaspoon black pepper
  • Salt, as needed

Rice & Eggs

  • 3 cups cooked and chilled long-grain rice
  • 2 large eggs, lightly beaten

Vegetables & Aromatics

  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Sauces & Oils

  • 2 tablespoons avocado oil or vegetable oil, divided
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon toasted sesame oil

Instructions

  1. Prepare the beef: Pat the sliced beef dry with paper towels and season lightly with black pepper and salt to enhance flavor and promote browning during cooking.
  2. Cook the beef: Heat 1 tablespoon of oil in a large skillet or wok over high heat for a minute until shimmering. Add the beef and stir-fry for 2–3 minutes, stirring occasionally, until browned but not fully cooked through. Remove the beef from the skillet and set aside.
  3. Scramble the eggs: Add the remaining 1 tablespoon of oil to the skillet. Pour in the beaten eggs and gently scramble them, cooking just until softly set but not dry.
  4. Sauté vegetables and aromatics: Add peas, carrots, minced garlic, and grated ginger to the skillet with the eggs. Stir-fry together for 1–2 minutes to develop flavor and soften the vegetables.
  5. Add the rice: Incorporate the chilled rice into the skillet, breaking up any clumps with a spatula. Stir-fry the mixture for 3–4 minutes until the rice is heated through and slightly toasted, ensuring even cooking.
  6. Combine beef and sauces: Return the cooked beef to the skillet. Add low-sodium soy sauce, oyster sauce, and toasted sesame oil. Toss everything together to coat the ingredients evenly with the savory sauce.
  7. Finish and serve: Stir in the sliced green onions for freshness and remove from heat. Serve the beef fried rice immediately to enjoy the best texture and flavor.

Notes

  • Use chilled, day-old rice for the best texture; freshly cooked rice can make the dish mushy.
  • Slice the beef against the grain to ensure a tender bite.
  • Feel free to add extra vegetables like mushrooms, bell peppers, corn, or broccoli for added nutrition and color.
  • Store leftover fried rice in an airtight container in the refrigerator for up to 3 days and reheat thoroughly before serving.
