Description
Beef & Smoked Cheddar Potato Soup is a rich and hearty comfort soup featuring tender beef, creamy diced potatoes, and smoky cheddar cheese. This savory, creamy soup combines the deep flavors of browned beef with aromatic herbs and melted cheese, making it a perfect warm meal for chilly days.
Ingredients
Beef & Vegetables
- 1 pound ground beef or diced beef
- 3 cups potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
Liquids & Dairy
- 2 tablespoons butter
- 3 cups beef broth
- 1 cup milk
Cheese & Seasonings
- 1 cup smoked cheddar cheese, shredded
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon thyme
- Salt and black pepper to taste
- 2 tablespoons chopped green onions or parsley for garnish
Instructions
- Brown the Beef: In a large pot over medium heat, cook the ground beef until fully browned. Drain excess fat from the pot and set the beef aside for later use.
- Sauté Aromatics: Using the same pot, melt the butter and add chopped onion. Sauté until the onion is softened and translucent.
- Add Garlic: Add minced garlic to the softened onion and cook for about 1 minute, stirring frequently, until fragrant without burning.
- Cook Potatoes: Stir in diced potatoes and pour in the beef broth. Bring the mixture to a boil, then reduce the heat and let it simmer gently for 15 to 20 minutes, or until the potatoes become tender when pierced with a fork.
- Combine Ingredients: Add the cooked beef back into the pot along with milk, smoked paprika, and thyme. Stir well and allow the soup to simmer for an additional 5 minutes to combine the flavors.
- Add Cheese: Stir in shredded smoked cheddar cheese until it melts thoroughly, resulting in a creamy texture throughout the soup.
- Season: Taste the soup and season with salt and black pepper as desired.
- Garnish and Serve: Ladle the soup into bowls and garnish with chopped green onions or parsley for a fresh finish before serving.
Notes
- Using Yukon Gold potatoes provides a naturally creamy texture to the soup.
- If you prefer a thicker consistency, mash some of the cooked potatoes before adding the cheese.
- Ground beef or diced beef can be used interchangeably based on texture preference.
- Smoked paprika enhances the smoky flavor along with the cheddar cheese.
