Ingredients

Chicken

  • 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1½ cups all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • Vegetable oil, for frying

Bang Bang Sauce

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tablespoons sriracha
  • 1 tablespoon honey


Instructions

  1. Marinate Chicken: Place chicken pieces in a bowl and pour the buttermilk over them. Let them marinate for 20 minutes to tenderize and add moisture.
  2. Prepare Coating: In a separate bowl, mix together all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper until well combined.
  3. Coat Chicken: Remove chicken from buttermilk and dredge each piece thoroughly in the flour mixture, ensuring an even coating on all sides.
  4. Heat Oil: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C), using a thermometer to monitor the temperature for perfect frying.
  5. Fry Chicken: Carefully add coated chicken pieces in batches to avoid overcrowding. Fry for 4 to 5 minutes until the exterior becomes golden and crispy and chicken is cooked through. Remove and drain on paper towels.
  6. Mix Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth and creamy.
  7. Toss Chicken in Sauce: Place fried chicken in a large bowl, pour the bang bang sauce over it, and toss well to evenly coat every piece.
  8. Serve: Immediately plate the sauced chicken and garnish with chopped green onions or sesame seeds if desired. Serve alone, over rice, noodles, or in lettuce wraps for a complete meal.

  • For a lighter option, bake the chicken at 400°F for 20-25 minutes or use an air fryer at 375°F for 15-18 minutes until cooked through and crispy.
