Ingredients
Chicken
- 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup buttermilk
- 1½ cups all-purpose flour
- ½ cup cornstarch

Bang Bang Sauce
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 2 tablespoons sriracha
- 1 tablespoon honey
Instructions
- Marinate Chicken: Place chicken pieces in a bowl and pour the buttermilk over them. Let them marinate for 20 minutes to tenderize and add moisture.
- Prepare Coating: In a separate bowl, mix together all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper until well combined.
- Coat Chicken: Remove chicken from buttermilk and dredge each piece thoroughly in the flour mixture, ensuring an even coating on all sides.
- Heat Oil: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C), using a thermometer to monitor the temperature for perfect frying.
- Fry Chicken: Carefully add coated chicken pieces in batches to avoid overcrowding. Fry for 4 to 5 minutes until the exterior becomes golden and crispy and chicken is cooked through. Remove and drain on paper towels.
- Mix Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth and creamy.
- Toss Chicken in Sauce: Place fried chicken in a large bowl, pour the bang bang sauce over it, and toss well to evenly coat every piece.
- Serve: Immediately plate the sauced chicken and garnish with chopped green onions or sesame seeds if desired. Serve alone, over rice, noodles, or in lettuce wraps for a complete meal.

- For a lighter option, bake the chicken at 400°F for 20-25 minutes or use an air fryer at 375°F for 15-18 minutes until cooked through and crispy.
