Ingredients
For the Cake
- 1½ cups (190g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 ripe bananas, mashed
- ½ cup (100g) brown sugar
- ⅓ cup (80ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
For the Streusel Topping
- ½ cup (60g) all-purpose flour
- ⅓ cup (67g) brown sugar
- 1 teaspoon ground cinnamon
- ¼ cup (57g) cold unsalted butter, cubed
Optional Glaze
- ½ cup (60g) powdered sugar
- 1 tablespoon milk
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan to prevent sticking.
- Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt to evenly distribute the leavening agents and spices.
- Mix Wet Ingredients: In another bowl, whisk together the mashed ripe bananas, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and combined.
- Combine Wet and Dry Ingredients: Add the dry ingredient mixture to the wet ingredients and gently mix until just combined; be careful not to overmix to keep the cake tender.
- Pour Batter into Pan: Pour the batter evenly into the prepared baking pan, smoothing the top with a spatula.
- Prepare Streusel Topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add Streusel on Top: Evenly sprinkle the streusel topping over the cake batter.
- Bake the Cake: Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the Cake: Remove the cake from the oven and allow it to cool in the pan for about 15 minutes.
- Optional Glaze: If desired, whisk together powdered sugar and milk to make a light glaze and drizzle it over the cooled cake for added sweetness and presentation.
- Serve: Slice the cake and serve warm or at room temperature, perfect alongside a cup of coffee or tea.
Notes
- Use very ripe bananas for the best natural sweetness and moisture.
- For extra texture, add chopped walnuts or pecans to the streusel topping before baking.
- Store the cake covered at room temperature for up to 3 days to maintain freshness.
