Description

This Banana Coffee Cake is a soft, moist treat bursting with sweet banana flavor. It features a buttery cinnamon streusel topping and is optionally finished with a light powdered sugar glaze, making it a perfect choice for breakfast, brunch, or an afternoon coffee break.

Ingredients

For the Cake

  • 1½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 ripe bananas, mashed
  • ½ cup (100g) brown sugar
  • ⅓ cup (80ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Streusel Topping

  • ½ cup (60g) all-purpose flour
  • ⅓ cup (67g) brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup (57g) cold unsalted butter, cubed

Optional Glaze

  • ½ cup (60g) powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan to prevent sticking.
  2. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt to evenly distribute the leavening agents and spices.
  3. Mix Wet Ingredients: In another bowl, whisk together the mashed ripe bananas, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and combined.
  4. Combine Wet and Dry Ingredients: Add the dry ingredient mixture to the wet ingredients and gently mix until just combined; be careful not to overmix to keep the cake tender.
  5. Pour Batter into Pan: Pour the batter evenly into the prepared baking pan, smoothing the top with a spatula.
  6. Prepare Streusel Topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  7. Add Streusel on Top: Evenly sprinkle the streusel topping over the cake batter.
  8. Bake the Cake: Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool the Cake: Remove the cake from the oven and allow it to cool in the pan for about 15 minutes.
  10. Optional Glaze: If desired, whisk together powdered sugar and milk to make a light glaze and drizzle it over the cooled cake for added sweetness and presentation.
  11. Serve: Slice the cake and serve warm or at room temperature, perfect alongside a cup of coffee or tea.

Notes

  • Use very ripe bananas for the best natural sweetness and moisture.
  • For extra texture, add chopped walnuts or pecans to the streusel topping before baking.
  • Store the cake covered at room temperature for up to 3 days to maintain freshness.
