Ingredients
Meat and Vegetables
- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cans (7 oz each) whole green chiles, drained

- 1 tsp cumin
- ½ tsp chili powder

Dairy and Baking
- 2 cups shredded cheddar cheese
- 4 large eggs
- 1 cup milk
- ¼ cup all-purpose flour
- ½ tsp baking powder
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Cook Beef and Onion: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain any excess fat.
- Season Meat: Stir in garlic powder, cumin, chili powder, salt, and pepper to the cooked beef mixture, ensuring even distribution of the spices.
- Layer Chiles: Arrange half of the drained green chiles evenly in the bottom of a greased 9×13-inch baking dish.
- Add Beef and Cheese: Spread the seasoned beef mixture over the layered chiles, then sprinkle 1½ cups of shredded cheddar cheese on top.
- Top with Remaining Chiles: Place the remaining green chiles over the cheese to form a second layer.
- Prepare Egg Mixture: In a bowl, whisk together eggs, milk, all-purpose flour, and baking powder until smooth and fully combined.
- Pour Egg Mixture: Evenly pour the egg mixture over the casserole layers, ensuring full coverage.
- Add Remaining Cheese: Sprinkle the remaining ½ cup of shredded cheddar cheese on top of the casserole for a cheesy crust.
- Bake: Bake in the preheated oven for 35–40 minutes until the casserole is golden brown on top and set in the center.
- Rest: Remove from oven and let the casserole rest for 10 minutes before slicing and serving to allow it to firm up.
Notes
- Serve warm with salsa, sour cream, or sliced avocado for added flavor.
- For a fresher taste, substitute canned green chiles with roasted fresh poblano peppers.
- This casserole can be made ahead and reheated for convenience.
- To make it spicier, add diced jalapeños or more chili powder to the beef mixture.
