Ingredients

For the Squash

  • 2 acorn squash, halved and seeds removed
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Filling

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 ripe avocado, diced
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, finely diced
  • ¼ cup chopped cilantro
  • Juice of 1 lime
  • 1 tbsp olive oil
  • ½ tsp cumin
  • ½ tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for roasting the squash.
  2. Prepare the squash: Brush the halved acorn squash with olive oil, then season with salt and black pepper evenly on the cut sides.
  3. Roast the squash: Place the squash halves cut-side down on a baking sheet. Roast in the preheated oven for 40 to 45 minutes or until the squash is tender when pierced with a fork.
  4. Make the filling: In a large bowl, combine the drained and rinsed black beans, diced avocado, corn kernels, halved cherry tomatoes, finely diced red onion, chopped cilantro, lime juice, olive oil, cumin, chili powder, and salt and pepper to taste. Mix gently to combine all ingredients without mashing the avocado.
  5. Stuff the squash: Once the squash is roasted and cool enough to handle, fill each half generously with the black bean and avocado mixture.
  6. Garnish and serve: Garnish with extra chopped cilantro if desired. Serve the stuffed acorn squash warm or at room temperature for a delicious meal.
