Description

Start your morning with this hearty Apple Sausage Breakfast featuring savory breakfast sausage, sweet crisp apples, caramelized onions, and perfectly seasoned potatoes. This comforting one-skillet breakfast is packed with flavor and ideal for weekend brunch or meal prep.

Ingredients

Meat and Produce

  • 1 lb breakfast sausage, sliced or crumbled
  • 2 medium apples, cored and diced
  • 2 cups baby potatoes, diced
  • 1 small onion, diced

Seasonings and Oils

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat the olive oil: Heat the olive oil in a large skillet over medium heat to prepare for sautéing the potatoes and other ingredients.
  2. Cook the potatoes: Add the diced baby potatoes to the skillet and cook for 10–12 minutes, stirring occasionally, until they are lightly browned and tender.
  3. Sauté the onions: Stir in the diced onion and cook for about 3 minutes until softened and translucent.
  4. Cook the sausage: Add the breakfast sausage to the skillet and cook until browned and fully cooked through, breaking it apart if crumbled.
  5. Add apples and seasonings: Mix in the diced apples along with garlic powder, dried thyme, smoked paprika, salt, and black pepper, stirring to combine all flavors evenly.
  6. Cook apples until tender: Continue cooking for 4–5 minutes, allowing the apples to soften slightly while retaining some crispness.
  7. Garnish and serve: Remove from heat, garnish with chopped fresh parsley, and serve the breakfast warm.

Notes

  • Honeycrisp or Gala apples work best for their sweetness and texture.
  • Add fried or poached eggs for extra protein and make it more filling.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
