Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners or grease it well to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, and salt. Stir well to evenly distribute the leavening agents and spices.
  3. Whisk Wet Ingredients: In another bowl, whisk together the sugar, egg, milk, oil (or melted butter), and vanilla extract until the mixture is smooth and well combined.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently mix them together just until combined—avoid overmixing to keep the muffins tender.
  5. Fold in Apples: Carefully fold in the diced apples into the batter, ensuring they are evenly dispersed without breaking down.
  6. Fill Muffin Cups and Add Topping: Divide the batter evenly among the muffin cups, filling them about 2/3 full. Sprinkle the cinnamon sugar topping mixture evenly over each muffin.
  7. Bake the Muffins: Bake in the preheated oven for 18–22 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
