Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners or grease it well to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, and salt. Stir well to evenly distribute the leavening agents and spices.
- Whisk Wet Ingredients: In another bowl, whisk together the sugar, egg, milk, oil (or melted butter), and vanilla extract until the mixture is smooth and well combined.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently mix them together just until combined—avoid overmixing to keep the muffins tender.
- Fold in Apples: Carefully fold in the diced apples into the batter, ensuring they are evenly dispersed without breaking down.
- Fill Muffin Cups and Add Topping: Divide the batter evenly among the muffin cups, filling them about 2/3 full. Sprinkle the cinnamon sugar topping mixture evenly over each muffin.
- Bake the Muffins: Bake in the preheated oven for 18–22 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
