Ingredients
Egg Mixture
- 2 large eggs
- Salt and black pepper, to taste
Wrap
- 1 large flour tortilla
- 1 tsp butter or olive oil
- ½ avocado, sliced
- ¼ cup shredded cheddar or mozzarella cheese
- ½ cup baby spinach
- Hot sauce (optional)
Instructions
- Beat the Eggs: In a small bowl, whisk together the 2 large eggs with salt and black pepper to taste until fully combined.
- Cook the Eggs: Heat 1 teaspoon of butter or olive oil in a nonstick skillet over medium heat. Pour in the beaten eggs and gently stir with a spatula, cooking until the eggs are just set but still fluffy, about 1-2 minutes.
- Warm the Tortilla: While the eggs cook, warm the flour tortilla in a separate dry skillet over medium heat for about 30 seconds per side or microwave it wrapped in a damp paper towel for 15-20 seconds until soft and pliable.
- Assemble the Wrap: Lay the warmed tortilla flat, then layer the baby spinach evenly over the surface. Spoon the scrambled eggs on top of the spinach. Add the sliced avocado and sprinkle shredded cheddar or mozzarella cheese over the eggs.
- Add Optional Hot Sauce: If desired, drizzle a small amount of hot sauce over the layered ingredients to add a spicy kick.
- Fold and Roll: Fold the sides of the tortilla inward to enclose the fillings, then roll tightly from one end to the other to form a wrap.
- Serve Immediately: Slice the wrap in half if desired and serve immediately while warm for best taste and texture.
Notes
- Add turkey, smoked salmon, or crisp bacon for additional protein and flavor variety.
- Using whole wheat tortillas increases fiber content making the wrap more filling.
- Best enjoyed fresh to maintain the tortilla’s softness and the avocado’s creamy texture.
