Ingredients
Noodles
- 8 oz (225 g) noodles (ramen, rice noodles, or lo mein)
Vegetables & Aromatics
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup snap peas
- 2 green onions, sliced
Sauce
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 1 teaspoon grated ginger
- 1 teaspoon cornstarch
- 2 tablespoons water
Instructions
- Cook the noodles: Prepare the noodles according to package directions until they are al dente, then drain and set aside to prevent overcooking.
- Heat the oil: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat to prepare for sautéing the vegetables.
- Sauté garlic: Add the minced garlic to the hot oil and cook for about 30 seconds until fragrant but not browned, to build a flavorful base.
- Cook vegetables: Add broccoli florets, sliced bell pepper, julienned carrot, and snap peas to the skillet. Stir-fry for 4 to 5 minutes until the vegetables are crisp-tender, retaining their vibrant color and crunch.
- Mix the sauce: In a small bowl, whisk together the low-sodium soy sauce, sesame oil, maple syrup, grated ginger, cornstarch, and water until smooth for a glossy, flavorful coating.
- Combine noodles and sauce: Add the drained noodles and the prepared sauce to the skillet with the vegetables. Toss everything together for 2 to 3 minutes over medium heat, ensuring the noodles are evenly coated and warmed through.
- Garnish and serve: Remove from heat, sprinkle with sliced green onions for freshness, and serve immediately while hot and flavorful.
Notes
- Add tofu or edamame to the stir-fry for extra protein to make it a complete meal.
- Use any vegetables you have on hand, such as mushrooms, zucchini, or baby corn, for variety and seasonal freshness.
- Best served immediately to enjoy the noodles at their optimal texture and flavor.
