Description

Zucchini Garlic Bites are a healthy, crispy, and flavorful snack or appetizer, featuring grated zucchini mixed with garlic and breadcrumbs, then baked to golden perfection. These bites are the perfect combination of crunch and tenderness, with a delicious garlic flavor that’s sure to please.

Ingredients

  • 2 medium zucchini, grated (about 2 cups)
  • 1/2 cup breadcrumbs (use gluten-free breadcrumbs if needed)
  • 1/4 cup grated Parmesan cheese (optional for a cheesy flavor)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • Olive oil or cooking spray (for greasing the baking sheet)

Instructions

  1. Prepare the zucchini: Grate the zucchini and squeeze out excess moisture using a kitchen towel or cheesecloth. This helps the bites hold together better when baking.
  2. Mix the ingredients: In a bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese (if using), salt, pepper, and minced garlic. Add the beaten egg and mix until well combined.
  3. Form the bites: Shape the mixture into small balls or patties, about 1 to 1 1/2 inches in diameter. If the mixture is too wet, add more breadcrumbs to bind it.
  4. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil or cooking spray.
  5. Bake the zucchini bites: Place the bites on the prepared baking sheet, leaving space between them. Lightly spray with olive oil. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
  6. Garnish and enjoy: Garnish with chopped fresh parsley and serve with your favorite dipping sauce like marinara, ranch, or garlic aioli.

Notes

  • For extra crispiness, add more breadcrumbs or spray with more oil before baking.
  • If you prefer a spicier version, add red pepper flakes to the mixture.
  • These bites can also be pan-fried for an even crispier exterior.
