Ingredients
Dressing
- ¼ cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 ½ teaspoons Dijon mustard
- ½ teaspoon honey
- ¼ teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Salad
- 6 cups (282 g) romaine lettuce, chopped
- 2 cups (280 g) rotisserie chicken, shredded, diced
- 1 medium Honeycrisp apple, diced
- ½ cup (80 g) red onion, diced
- ½ cup (87 g) pomegranate seeds
- ½ cup (65 g) dried cranberries
- ½ cup (56 g) candied pecans, roughly chopped (use store-bought or homemade)
- ½ cup (100 g) feta cheese, crumbled
Instructions
- Dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, garlic powder, kosher salt, and black pepper. Set aside to allow the flavors to develop.
- Salad: To a large bowl, add romaine lettuce, chicken, apple, red onion, pomegranate seeds, dried cranberries, candied pecans, and feta cheese. Toss to combine.
- Just before serving, drizzle the dressing over the salad. Toss gently to coat all the ingredients evenly.
